Ayam Betutu, Cita Rasa Warisan Budaya Nusantara
Ayam betutu merupakan masakan khas dari Bali. Menurut ahli Gastronomi, Betutu adalah garis walacenya seni kuliner nusantara. Pembatas antara Seni makanan Barat dan Timur Di Indonesia.
Peralihan dari makanan manis di Jawa, ke makanan pedas di Timur. Betutu sudah mendapat penetapan sebagai Warisan Budaya Tak benda (WBTB) Indonesia.
Karena itu, kuliner betutu konon sedang diusahakan ditingkatkan fungsinya sebagai sarana diplomasi. Diplomasi maksudnya, untuk mewujudkan persaudaraan, kerukunan antar umat beragama.
Karena kuliner ini dianggap sebagai kuliner yang paling netral dan tidak haram bagi kelompok agama tertentu. Nasi betutu biasanya tersaji bersama lauk tambahan seperti telur masak bali, satai lilit, lawar dan sambal matah.
Betutu ini dulunya hanya bisa diolah dengan teknik khusus dan waktu memasaknya juga sangat lama. Memasaknya juga masih tradisional yakni dengan menggunakan sekam dan bara api.
Proses Pembuatan Ayam Betutu
Bahan baku utama untuk membuat ayam betutu tentu saja ayam, namun bila ingin mencicipi rasa yang beda bisa juga dengan menggunakan daging bebek.
Sebelum dimasak daging ayam atau bebek tadi dibungkus terlebih dahulu dengan pelepah pinang atau daun pisang supaya aromanya lebih harum.
Namun, sebelum membungkusnya harus diberi bumbu khas betutu yang dimasukan ke bagian dalam perut ayam atau bebek tersebut.
Setelah semua siap, bakar ayam pada api sekam. Sebelum dibakar menggunakan sekam, bungkusan ayam akan ditanam masuk menuju lubang di dalam tanah dan ditutup menggunakan bara api tersebut.
Sementara itu, proses pembakaran ayam betutu memang membutuhkan waktu yang cukup lama agar memperoleh cita rasa ayam yang empuk, gurih, bau aroma sekam serta memiliki cita rasa yang unik.
Namun kini cara tersebut mulai ditinggalkan oleh banyak penjual ayam betutu karena memakan waktu yang terlalu lama, serta dinilai kurang efisien.
Untuk itu, mereka mulai beralih ke cara yakni dengan menggunakan alat masak modern yang bisa menghasilkan hasil masakan yang empuk bahkan hingga ke bagian tulangnya.
Ayam yang sudah dibumbui serta dibungkus dengan daun pisang dikukus selama satu jam. Kemudian, setelah dikukus, kembali dimasak dengan cara dipanggang menggunakan oven hingga matang. Dengan cara ini ayam betutu lebih cepat matang dibandingkan dengan cara pertama diatas.
Olahan makanan ini ternyata dulunya merupakan sajian yang hanya ada pada upacara keagamaan saja. Namun sekarang semua orang bisa merasakan kelezatan makanan khas bali ini kapan pun dan dimanapun.
Tahukah kamu, begitu ayam betutu disajikan harus segera dimakan karena betutu tak tahan lama. Lebih nikmat jika disajikan dengan sepiring nasi hangat.
Sejarah Betutu
Betutu adalah makanan khas Bali yang berasal dari Gianyar, namun kini tersebar di seluruh daerah di Bali. Ayam Betutu mulai diproduksi secara komersil oleh Ni Wayan Tempeh yang berasal dari wilayah Abiansi, kota Gianyar sekitar tahun 1976.
Pada zaman dahulu enaknya aroma betutu biasanya dihadirkan dalam upacara keagamaan, namun kini betutu mudah ditemui setiap hari.
